Sarcosinate anti-caries activity: n-lauroyl sarcosinate inhibits acid production by streptococcus mutans (caries-causing bacteria) by disrupting bacterial cell membrane function from the glycine backbone's interaction with bacterial membrane proteins. this anti-caries activity is unique to the sarcosinate class โ explaining the long use of sodium lauroyl sarcosinate in anti-cavity toothpastes alongside its surfactant cleansing function.
